"Macheesmo," according to the blog of the same name, is an invented phrase that simply means having confidence in the kitchen. The website itself is predicated on the idea that that confidence is something that can be learned; indeed, it is all about exploring ways to become more confident in the kitchen. The entries include recipes, but more than that, the author gives a full explanation of what he did, as well on tips on how he would do it differently next time.
